One of my favorite things about summer is summer produce…and berries are one of them! I bought a huge thing of blueberries for only $5 at Safeway the other day, so I made these delicious 9-ingredient blueberry crisp bars.
What you’ll need to make them:
For the crust:
- 1/2 cup plain or vanilla Greek yogurt
- 1 whole egg
- 2 tbsp unsweetened applesauce
- 1/2 cup almond flour
- 1 cup old fashioned rolled oats
- (OPTIONAL) 1 scoop of collagen peptides
- 1 tsp cinnamon
- a pinch of salt
(Since I had a cinnamon flavored applesauce, I omitted the 1 tsp of cinnamon).
For the filling:
- 2 cups of blueberries
- 2 tbsp sweetener of choice (honey, maple syrup, sugar)
- 1 tbsp lemon juice (I only had lime juice on hand)
For the crumble topping:
- 2 additional tbsp sweetener
- 2 additional tbsp old fashioned rolled oats
Preheat oven to 350 degrees Fahrenheit. Line an 8×8 inch baking pan with parchment paper and set aside.
In a large mixing bowl mix together Greek yogurt, egg, and unsweetened applesauce.
Gradually stir in almond flour, old fashioned rolled oats, collagen peptides (optional), sweetener, cinnamon, and salt.
Stir until dough-like consistency.
Measure out 1/2 cup of the dough and set aside.
Press the remaining dough into the bottom of the 8×8 baking pan.
Next, we’re going to make the filling!
Toss 2 cups of blueberries with lemon (or lime) juice and sweetener until fully coated.

Spread evenly over crust.
Take the 1/2 cup of dough set aside and mix in the 2 additional tbsp of sweetener and oats.
Sprinkle mixture over the blueberry filling.
Bake in the oven at 350 degrees for 40 minutes or until top is golden brown.
Remove from oven and allow to cool completely.
Cut it up into squares and eat as so or top with some vanilla bean ice cream!
Store in refrigerator for up to one week. Enjoy cold or warmed up; with or without ice cream/whipped cream.
